Yield: 4 servings Ingredients: 2 tomatoes, chopped 1 cucumber, peeled and chopped 1 green pepper, seeded and chopped 4 tablespoons chopped fresh parsley 2 tablespoons olive oil Juice of 1 lemon, (about 3 tbsp) 1/2 teaspoon salt 1/4 teaspoon pepper 1. In a large bowl, combine chopped tomatoes, cucumber, green pepper and parsley. Sprinkle with olive oil and toss. 2. Add lemon juice, salt and pepper to salad and toss again. Serve immediately. |
